Anything is possible when you put your mind to it, she says

Between owning and operating three businesses and raising four children, it is a wonder that Mandy Klein has any time left over for herself.

Klein was born in Kansas City, Missouri and she lived there until she was twelve.

Klein and her family moved to Warsaw and she attended Lincoln schools until she graduated.

At age fifteen Klein went to work at Estes Drive-In in Lincoln and she worked there until she was 18.

After working for Estes’ Klein began working at Rigby’s Truck Stop until it burned down. After Rigby’s Klein went back to work for Estes.

After her last stint at Estes ended Klein began working at Waterloo from 1996 to 2000.

After her children were born she stayed at home with them for three years.

Klein has been married to her husband Jeremy since 1997 and together they have four children, Michael, Mason and twins Madison and Hunter.

In 2004 Klein and her husband purchased Plaza 16 gas station at 120 E. 16th Street.

“I worked there for about eight or nine months before we bought it,” Klein said.

In 2009 the Kleins purchased Steve’s Korner Lounge and rechristened it Mandy’s Korner Lounge.

“The opportunity was there so we did it,” Klein said of the purchase.

If owning two businesses wasn’t enough to keep Mandy busy, in June of this year she opened Frozen Delight.

Frozen Delight is an eatery that serves all kinds of treats and food. It is located at 108 W. 16th Street.

“My husband has nothing to do with this. I like the gas station, but it is his thing,” Klein said.

Klein was asked if she enjoys working at her new eatery.

“It takes a lot of time. I enjoy it. I really enjoy cooking and I am really proud of my food here.

“I enjoy all of the customers that we have. I enjoy talking to them,” Klein said.

Klein was asked if she and her husband have plans on opening any other businesses.

“We are just going to focus on these three for now, and if an opportunity came along we would have to look at it and see if it is worth it,” she said.

She added, “Anybody can do what they want to do as long as they put their mind to it. You go through a lot of experiences owning your own businesses.”

Mandy was asked if she has time to enjoy doing non-work related things in her spare time.

“I like antiquing. I like to spend time with my family and friends. I also like arrowhead hunting.

“We went on vacation last year to Hawaii and it was wonderful. It was our first vacation in eight or nine years. It was a lot of fun. I also like going to auctions. I like that a lot. I don’t have a lot of time, but when I do I like to spend time with my kids, my husband and my family.”
